Tropical Fish Kebabs Recipe

Serves 4

Variation: substitute fresh pineapple for mango.

Ingredients:

  • 2 lbs monkfish
  • 2 garlic cloves, crushed
  • 1 fresh green chili, seeded, chopped
  • 1 1-inch piece ginger root, peeled, chopped
  • Juice of 1 lime
  • Salt, to taste
  • Fresh ground pepper to taste
  • 1/3 cup corn oil
  • 1 ripe mango
  • 2 bananas
  • 1 red bell pepper, seeded, cut into cubes
  • Lime wedges



  • Instructions:

    1. Cut away monkfish from central bone.
    2. Cut flesh into bite-size pieces.
    3. In a shallow glass dish, combine garlic, chili, ginger, lime juice, salt, pepper and oil.
    4. Add fish and stir gently.
    5. Cover and refrigerate for 2 hours.
    6. Meanwhile, slice mango lengthwise on each side, close to seed.
    7. Peel and cut mango flesh into small pieces.
    8. Preaheat grill.
    9. Cut bananas into chunky pieces.
    10. On 4 long or 8 short bamboo skewers, alternate fish with cubes of bell pepper, mango and banana.
    11. Arrange skewers in a broiler pan and spoon marinade over skewers.
    12. Broil for 12-15 minutes, turning frequently and basting with marinade, or until cooked through.
    13. Serve with lime wedges.
