Tod Man Recipe
Serves 6 Ingredients: 2 lbs minced fish
1 tsp salt
1/2 cup red curry paste
1 egg
1 tsp Nam Pla
1 cup finely chopped green beans
2 basil leaves, finely, chopped
Vegetable oil
1 cup English cucumber, cut into fourths and sliced
3 shallots, sliced thinly
1 red hot chile pepper, sliced
2 tsp sugar
1 tsp vinegar
1 tsp salt
1/2 cup hot water
Instructions: 1. In food processor mix to a paste the fish, salt, curry paste, egg and Nam Pla.
2. Form paste into balls with hand.
3. Fold in green beans and basil.
4. Flatten each piece into 2-inch circles.
5. Heat oil over medium heat.
6. Fry fish until light golden in color.
7. Dry on paper towel.
8. Serve with cucumber salad.
9. Salad: in a serving bowl, arrange cucumber, shallot and chile in layers.
10. Mix sugar, vinegar and salt.
11. Add hot water; stir until sugar dissolves.
12. Pour over cucumber mixture.
