Tod Man Recipe

Serves 6

Ingredients:

  • 2 lbs minced fish
  • 1 tsp salt
  • 1/2 cup red curry paste
  • 1 egg
  • 1 tsp Nam Pla
  • 1 cup finely chopped green beans
  • 2 basil leaves, finely, chopped
  • Vegetable oil
  • 1 cup English cucumber, cut into fourths and sliced
  • 3 shallots, sliced thinly
  • 1 red hot chile pepper, sliced
  • 2 tsp sugar
  • 1 tsp vinegar
  • 1 tsp salt
  • 1/2 cup hot water



  • Instructions:

    1. In food processor mix to a paste the fish, salt, curry paste, egg and Nam Pla.
    2. Form paste into balls with hand.
    3. Fold in green beans and basil.
    4. Flatten each piece into 2-inch circles.
    5. Heat oil over medium heat.
    6. Fry fish until light golden in color.
    7. Dry on paper towel.
    8. Serve with cucumber salad.
    9. Salad: in a serving bowl, arrange cucumber, shallot and chile in layers.
    10. Mix sugar, vinegar and salt.
    11. Add hot water; stir until sugar dissolves.
    12. Pour over cucumber mixture.
