Three-Fish Teriyaki Recipe

Serves 4

Ingredients:

  • 1/4 cup low sodium soy sauce
  • 1 tbsp vegetable oil
  • 2 tbsp rice vinegar
  • 1 tbsp garlic, minced
  • 1 tbsp fresh ginger root, minced
  • 1 1/2 cups pineapple or orange juice
  • 1/2 lb salmon
  • 1/2 lb tuna
  • 1/2 lb swordfish or shark



  • Instructions:

    1. In a small bowl, combine the soy sauce, oil, vinegar, garlic, ginger and pineapple juice.
    2. Place the fish in a shallow baking dish and pour on the marinade.
    3. Cover and marinate in the refrigerator for 2 hours, turning the fish once.
    4. Remove the fish from the marinade, reserving the marinade.
    5. Grill the fish for about 5 minutes on each side, or broil it for a total of 10 minutes.
    6. In a small pan, bring the marinade to a boil; reduce the heat and simmer for 5 minutes.
    7. Serve with the fish.
