Orange Roughy with Vegetables Recipe

Serves 4

Exchanges per Serving: 4 protein, 2 vegetable.

Ingredients:

  • 2 lb orange roughy fillets
  • 2 tbsp lemon juice, divided
  • 16 oz can stewed tomatoes, cut
  • 1/2 tsp mixed Italian herbs
  • 1 cup celery, minced
  • 1 cup onion, chopped
  • 1 cup bell pepper
  • 1 cup mushrooms, sliced
  • 1/4 tsp thyme
  • Pinch garlic powder
  • Pinch hot pepper flakes


  • Instructions:

    1. Spray a 13x9 Pan with non stick cooking spray and sprinkle with 1 tbsp of lemon juice.
    2. Arrange fish in a single layer and sprinkle with 1 tbsp lemon juice.
    3. Combine remaining ingredients and spoon over fish.
    4. Bake uncovered in a 350 degrees oven for 25-30 minutes, until hish flakes and sauce is thick.
