Orange Roughy with Vegetables Recipe
Serves 4
Exchanges per Serving: 4 protein, 2 vegetable.
Ingredients: 2 lb orange roughy fillets
2 tbsp lemon juice, divided
16 oz can stewed tomatoes, cut
1/2 tsp mixed Italian herbs
1 cup celery, minced
1 cup onion, chopped
1 cup bell pepper
1 cup mushrooms, sliced
1/4 tsp thyme
Pinch garlic powder
Pinch hot pepper flakes
Instructions: 1. Spray a 13x9 Pan with non stick cooking spray and sprinkle with 1 tbsp of lemon juice.
2. Arrange fish in a single layer and sprinkle with 1 tbsp lemon juice.
3. Combine remaining ingredients and spoon over fish.
4. Bake uncovered in a 350 degrees oven for 25-30 minutes, until hish flakes and sauce is thick.
