Roast Fish with Potatoes and Olives Recipe

Serves 2

Ingredients:

  • 3 baking potatoes, peeled and sliced
  • 4 6 oz pieces sea bass, snapper or other white fish
  • Salt and freshly ground, pepper
  • 1/4 cup olive oil
  • 2 tsp chopped garlic
  • 3 bay leaves
  • 12 black olives, pitted
  • 1/4 cup white wine
  • 1/4 cup water
  • 2 frozen or canned artichokes, quartered


Instructions:

1. Boil potatoes until crisp-tender, about 5 minutes.
2. Drain and place in bowl.
3. Toss with olive oil, garlic, bay leaves, black olives, artichokes, wine and water.
4. Preheat oven to 450F.
5. Season fish with salt and pepper.
6. Place potatoes in a baking dish along with marinade.
7. Top with fish.
8. Bake for 15 - 20 minutes or until potatoes are crusty and fish is cooked.
