White Perch in Beer Batter Recipe

Serves 4

Ingredients:

  • 6 tbsp flour
  • 1/4 can (3 oz) beer
  • 2 tbsp yellow cornmeal
  • 4 white perch scaled and sprinkled inside and out with lemon juice
  • 1/2 tsp dill weed or tarragon
  • 1 tsp salt
  • 1 tbsp paprika
  • 4 tbsp lard or cooking oil


  • Instructions:

    1. Mix the flour, cornmeal, dill or tarragon, salt, and paprika in a bowl, then add the beer and beat until smooth.
    2. Dip the fish in the beer batter one at a time.
    3. Heat the lard in an iron skillet and saute the fish for 8 to 9 minutes to the side.
