Cracker-Coated Fried Perch Recipe

Serves 4

Your favorite fisherman would be proud to find his catch fried with this golden coating.

Ingredients:

  • 2 eggs
  • 1/2 cup milk
  • 2 cups butter-flavored cracker crumbs
  • 1/2 tsp garlic salt
  • 1/4 tsp dried oregano
  • 1/4 tsp dried tarragon
  • 1/4 tsp pepper
  • 1 lb lake perch fillets
  • Cooking oil


  • Instructions:

    1. In a shallow bowl, beat eggs and milk.
    2. In another shallow bowl, combine cracker crumbs, garlic salt, oregano, tarragon and pepper.
    3. Cut perch into serving-size pieces; dip in egg mixture, then coat with crumbs.
    4. Heat oil in a skillet over medium heat.
    5. Fry fish for several minutes on each side or until it flakes easily with a fork.
