Monkfish Kebob with Vegetables Recipe

Serves 2 to 4

Ingredients:

  • 1 lb monkfish filets, cut into cubes
  • Onions
  • Green peppers
  • Cherry tomatos
  • Zucchini
  • Corn on the cob
  • 8 kebob sticks
  • Marinade:
  • 1 clove garlic, minced
  • 2 cup oil
  • 1 cup white wine
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp thyme
  • 1/4 tsp dill
  • 1/4 tsp oregano
  • 1/4 tsp paprika


  • Instructions:

    1. Mix together marinade ingredients. Marinate monkfish cubes for at least an hour.
    2. Cut vegetables into chunks.
    3. Place monkfish cubes and vegetables on kebob skewers.
    4. Marinate skewers in large casserole or baking dish, covered and refrigerated for three hours.
    5. Broil in oven, lightly basting and turning often for approximately 8-10 minutes.
    6. Serves 4, 2 kebobs each, as an appetizer or 2, 4 kebobs each, as a main dish.
