Halibut Stir-Fry Recipe
Serves 4
Cod, pollack and albacore tuna are examples of other lean fish that would be delicious substitutes for the halibut.
Nutrition Information Per Serving: 170 calories, 22 g protein, 9 g carbohydrate, 6 g fat, 35 mg cholesterol, 630 mg sodium, 610 mg potassium, 18% vitamin A, 22% vitamin C, 6% thiamin, 6% riboflavin, 6% niacin, 4% calcium, 8% iron.
Ingredients: 2 tsp sesame oil
1 lb halibut or lean fish steaks, cut into l-inch pieces
1 medium onion, thinly sliced
3 cloves garlic, finely chopped
1 tsp finely chopped gingerroot
1 pk (10 ounces) frozen asparagus cuts, thawed and drained
1 can (4 ounces) sliced mushrooms, drained
1 medium tomato, cut into thin wedges
2 tbsp soy sauce
1 tbsp lemon juice
Instructions: 1. Heat oil in 10-inch nonstick skillet over medium-high heat.
2. Add fish, onion, garlic, gingerroot and asparagus.
3. Stir-fry 2 to 3 minutes or until fish almost flakes with fork.
4. Carefully stir in remaining ingredients; heat through.
5. Serve with additional soy sauce if desired.
