Fish Mulligan Recipe

Serves 6

To this recipe, you can also add chicken breasts (skinned, boned, cubed), shrimp, clams, oysters, etc. Recipe doubles easily.

Ingredients:

  • 6 diced bacon strips
  • 3 medium onions, sliced
  • 1 1/2 pounds fresh haddock, cut in 2 1/2" pieces
  • 1 1/2 pounds peeled potatoes, cut in 3/4" cubes
  • 3 large carrots, cut in 3/4" cubes
  • 1/2 tsp celery seeds
  • 1/4 cup diced green pepper
  • 2 tsp salt (or salt to taste)
  • 1/2 tsp pepper
  • 3 cups boiling water
  • 1 can (28 oz) crushed tomatoes (3 1/2 cups)
  • 2 tbsp snipped parsley


  • Instructions:

    1. In deep kettle or Dutch oven, saute bacon until lightly browned; remove bacon, set aside.
    2. In same kettle, saute onions until tender.
    3. Add fish, potatoes, celery seeds, carrots, green peppers, salt, pepper, chicken and/or any other seafood and boil ing water.
    4. Simmer, covered, until vegetables are tender, about 25 minutes.
    5. Add tomatoes; heat.
    6. Garnish with parsley and crumbled bacon bits.
