Thai Style Gemfish with Beans and Mushrooms Recipe

Serves 6

Ingredients:

  • 1 1/2 lbs gemfish
  • 4 oz green beans
  • 4 oz button mushrooms
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tbsp flour
  • 1 cup peanuts
  • 3 Birdseye chilis
  • 1 bell pepper
  • Spring onions
  • 1 tbsp lemon grass
  • 4 cloves garlic
  • 2 tsp pepper
  • Pinch of salt



  • Instructions:

    1. Cut 1 1/2 lbs of gemfish into bite-sized pieces.
    2. Top tail and slice about 4 oz of green beans, and slice 4 oz of button mushrooms.
    3. In a cup or small bowl, mix 2 tbsp of fish sauce, one tbsp of sugar and 1 tbsp of flour with a little water.
    4. For garnishing have ready a cup of crushed peanuts, three Birdseye chillies, chopped (these are the small fiercely hot chillies), a handful of both fine strips of capsicum and spring onions.
    5. Pound together or process 1 tbsp of lemon grass pieces, 4 cloves of garlic, 2 tsp of pepper and a pinch of salt.
    6. In a wok or frypan heat some sesame oil and brown the processed paste over medium heat for a few minutes.
    7. Turn up the heat, add beans mushrooms and fish, and stir-fry gently for about 3 minutes.
    8. Add the fish sauce mixture and stir for a minute or two until the liquid thickens.
    9. Serve, sprinkled with above garnish and plain rice.
