Rice Stuffed Flounder Recipe

Serves 4

Ingredients:

  • 1 onion, small, chopped
  • 1 cup mushrooms, sliced
  • 1 tbsp margarine
  • 1 cup chicken broth
  • 1/2 cup half-and-half
  • 1 1/2 tbsp cornstarch
  • 1 tsp dill weed
  • 1 1/2 cup brown rice
  • 3/4 cup carrot, grated
  • 3/4 cup zucchini, grated
  • 4 flounder fillets (4 oz)
  • 1/4 tsp salt
  • 1/4 tsp paprika


Instructions:

1. Heat oven to 350'F.
2. Brown onion and mushrooms in hot margarine.
3. Mix broth, half-and-half, cornstarch and dill; add to pan. Bring to boil.
4. Add rice; return to boil.
5. Reduce heat; cover. Simmer 5 minutes.
6. Remove from heat. Stir in carrot and zucchini. Let stand 5 minutes.
7. Stuff fish with mixture and sprinkle with salt and paprika.
8. Bake fish over any remaining mixture 15-20 minutes.
