Fisherman's Stew RecipeServes 4 to 6 Ingredients:Instructions:1. In large pot, heat olive oil and saute onions and garlic until limp.2. Add tomatoes, beer, pepper flakes, oregano, basil, salt and pepper, stirring well to blend. 3. Bring to a boil. 4. Lower heat. 5. Cover and simmer for 1 hour. 6. Meanwhile, cut sausage into 1-inch chunks and saute in oil until well browned and done. 7. Drain and set aside. 8. After tomato mixture has simmered for 1 hour, taste and adjust seasonings. 9. Add sausage, shrimp, mussels, clams and fish. 10. Cook briskly, uncovered, for 8 to 10 minutes, or until shellfish are open. 11. This seafood medley is good with rice, tossed salad and French bread. |
