Fisherman's Stew Recipe

Serves 4 to 6

Ingredients:

  • 2 tbsp olive oil
  • 1 large onion, coarsely chopped
  • 2 garlic cloves, chopped
  • 30 oz canned Italian plum tomatoes
  • 12 oz beer
  • 1/8 tsp red pepper flakes
  • 1/2 tsp oregano, crumbled
  • 1 tsp basil, crumbled
  • 1/2 tsp salt
  • Freshly ground pepper to taste
  • 1/2 lb mild or hot Italian sausage
  • 1/2 lb medium or large shrimp, shelled and deveined
  • 1 lb mussels, cleaned
  • 1 lb small clams, cleaned
  • 1 lb fish filets, cut in chunks


  • Instructions:

    1. In large pot, heat olive oil and saute onions and garlic until limp.
    2. Add tomatoes, beer, pepper flakes, oregano, basil, salt and pepper, stirring well to blend.
    3. Bring to a boil.
    4. Lower heat.
    5. Cover and simmer for 1 hour.
    6. Meanwhile, cut sausage into 1-inch chunks and saute in oil until well browned and done.
    7. Drain and set aside.
    8. After tomato mixture has simmered for 1 hour, taste and adjust seasonings.
    9. Add sausage, shrimp, mussels, clams and fish.
    10. Cook briskly, uncovered, for 8 to 10 minutes, or until shellfish are open.
    11. This seafood medley is good with rice, tossed salad and French bread.
