Fisherman's Stew Recipe
Serves 4 to 6 Ingredients: 2 tbsp olive oil
1 large onion, coarsely chopped
2 garlic cloves, chopped
30 oz canned Italian plum tomatoes
12 oz beer
1/8 tsp red pepper flakes
1/2 tsp oregano, crumbled
1 tsp basil, crumbled
1/2 tsp salt
Freshly ground pepper to taste
1/2 lb mild or hot Italian sausage
1/2 lb medium or large shrimp, shelled and deveined
1 lb mussels, cleaned
1 lb small clams, cleaned
1 lb fish filets, cut in chunks
Instructions: 1. In large pot, heat olive oil and saute onions and garlic until limp.
2. Add tomatoes, beer, pepper flakes, oregano, basil, salt and pepper, stirring well to blend.
3. Bring to a boil.
4. Lower heat.
5. Cover and simmer for 1 hour.
6. Meanwhile, cut sausage into 1-inch chunks and saute in oil until well browned and done.
7. Drain and set aside.
8. After tomato mixture has simmered for 1 hour, taste and adjust seasonings.
9. Add sausage, shrimp, mussels, clams and fish.
10. Cook briskly, uncovered, for 8 to 10 minutes, or until shellfish are open.
11. This seafood medley is good with rice, tossed salad and French bread.
