Fish Fillets with Stuffing Recipe

Serves 6


  • 2 tbsp butter or margarine, melted
  • 1/3 cup chicken broth
  • 1/2 cup onion, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1/2 cup fresh mushrooms, chopped
  • 1/4 cup fresh parsley, minced
  • 1/2 cup dry bread crumbs
  • 1 egg, beaten
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1/8 tsp pepper
  • 3 pounds fish fillets
  • Paprika


1. In a large bowl, combine the first 11 ingredients and mix well.
2. In a greased 9 x 13 microwave safe dish, arrange the fillets with stuffing between them.
3. Moisten paper towels with water; place over fish.
4. Cook on high for 15 to 16 minutes or until fish flakes easily with a fork, rotating dish occasionally.
5. Sprinkle with paprika.
