Bayou Catfish Balls Recipe
Serves 4 Ingredients: 2 lb catfish fillets
1 tsp hot sauce
Salt (to taste)
Pepper (to taste)
3 eggs (beaten)
1 1/2 cup cornmeal
Cooking oil
Instructions: 1. Rub fish with hot sauce, salt and pepper.
2. Set aside for 1 hour or more.
3. Cut fish into bite-size pieces and dip into eggs. Roll in cornmeal.
4. Fry quickly in deep fat for 2 or 3 minutes, or until golden brown. Drain.
5. Serve hot.
