Carrot Bundle Fish Recipe
Serves 4 Ingredients: 4 medium carrots in strips
1 cup Italian bread crumbs
1/3 cup butter or margarine, melted
1/2 tsp salt
1/4 tsp pepper
2 tbsp lemon juice
1 lb sole or orange roughy
Instructions: 1. Heat oven to 375F.
2. Add carrots and enough water to cover in saucepan.
3. Bring to full boil and cook over medium heat until carrots are crispy tender (6-8 min).
4. Meanwhile, in small bowl combine all ingrediants except fish; set aside.
5. When carrots are done, seperate fish fillets and divide carrots equally among fillets.
6. Wrap each fillets around each portion of carrots.
7. Place fillets, seam down, in 9" square baking pan (slightly sprayed with grease).
8. Sprinkle fish bundles with stuffing mixture.
9. Cover and bake for 10 minutes.
10. Uncover; continue baking for 8-10 more minutes or until fish flakes with fork.
