Brown Trout with Mint Recipe

Serves 2 or 3

Ingredients:

  • 1 large onion, sliced
  • 4 tbsp butter
  • 2 tbsp vegetable oil
  • 1 brown trout, about 2 pounds, cleaned and cut into 4 pieces
  • 10 sprigs fresh mint
  • 1/4 to 1/2 cup vinegar
  • Dash of salt (optional)


  • Instructions:

    1. In large skillet, sauté onion in butter and vegetable oil until soft.
    2. Push onion aside and add trout to skillet. Cook, uncovered, for about 5 minutes on each side.
    3. Cover and cook for another 5 minutes.
    4. Mince fresh mint over fish and onion. Add vinegar and salt.
    5. Heat and stir until nicely seasoned, about 3 minutes.
    6. Place fish on heated platter, and arrange sautéed onion around and on top of fish
