Bluefish Rolls Recipe

Serves 4

Also for: white trout, amberjack, spanish mackerel.

Ingredients:

  • 2 lb bluefish fillet, 12" long
  • 1 cup wine, white
  • 3/4 tsp salt
  • 1/2 tsp lemon pepper
  • 1 tsp oregano
  • 1/2 cup parsley, chopped
  • 1/2 cup almonds, crushed
  • 12 cherry tomatoes
  • 3 cup noodles, cooked
  • 1/4 cup parsley, finely chopped
  • 1/4 cup romano cheeze
  • 1 tsp olive oil
  • 1 lemon
  • Pinch pepper


  • Instructions:

    1. Preheat oven to 400 degrees.
    2. Soak fish strips in wine for 5-10 minutes in fridge.
    3. Mix in small bowl spices, parsley and almonds.
    4. Dip fish in mixture, then roll each strip around cherry tomato.
    5. Place rolls on lightly oiled baking dish.
    6. Bake for 10-14 minutes.
    7. Prepare noodles while fish is baking.
    8. Drain and add parsley, cheeze, oil and pepper.
    9. Place fish rolls on noodles and serve.
