Pan-Fried Black Bass with Maitre D'Hotel Sauce Recipe
Serves 4
This recipe includes a very simple sauce that enhances sauteed, broiled or baked fish. It can be made in camp if you brought parsley and usually impresses any old "Fried Fish Angler".
Ingredients: Maitre D'Hotel Sauce:
1/2 clove garlic, smashed
1 tbsp lemon juice
1/4 cup butter
1/8 tsp pepper
1/2 tsp salt
1 tbsp finely minced parsley
Bass:
1/4 cup yellow cornmeal
1/4 cup flour
4 1-lb bass, dressed and skinned
4 tbsp butter
Salt and fresh pepper
Instructions: 1. Make the sauce first.
2. In a bowl set the butter out to soften.
3. Then cream it with a fork and then a spoon until it is light and fluffy.
4. Work in the salt and pepper.
5. Mix the smashed garlic and the lemon juice, then work this liquid into the butter.
6. Take a bit of time to do this.
7. Mix in the parsley and serve in a gravy boat with a spoon.
8. Pan fry the bass remembering to brown the fish on both sides but not to over cook.
9. Serve hot on hot plates and pass the sauce.
