Crawfish Kowalski Recipe

Serves 4

Ingredients:

  • 2 cup rotelli pasta, cooked
  • 4 tbsp butter
  • 1/2 cup green onions, chopped
  • 1/2 cup polish sausage, chopped
  • 1 tbsp garlic, minced
  • 1/4 tsp cayenne pepper
  • 1/2 tsp black pepper
  • 1 cup heavy cream
  • 2 ounce Dixie (or other) beer
  • 1 lb cooked crawfish tails
  • 1 tbsp parsley, chopped
  • Salt to taste


  • Instructions:

    1. Meanwhile, saute green onions and sausage in butter until onions are tender but not browned.
    2. Add garlic and saute for 1 minute.
    3. Add peppers, cream and beer.
    4. Simmer, stirring until slightly thickened, for about 5 minutes.
    5. Add crawfish simmer 2 to 3 minutes, stirring.
    6. Add salt to taste, toss in pasta and parsley and serve.
