Crawfish and Pasta Recipe

Serves 6

Ingredients:

  • 4 tbsp butter
  • 4 tbsp flour
  • 6 cups crawfish milk
  • 2 lb crawfish tails
  • 1/2 tsp minced garlic
  • 1/2 cup chopped green onions
  • Cayenne pepper
  • Salt
  • 3/4 cup Dijon mustard
  • 1 lb fresh pasta


  • Instructions:

    1. To make crawfish milk, soak the tails in milk for 1 hour and strain.
    2. Melt butter and add flour.
    3. Cook for 5 minutes over medium heat.
    4. Add garlic and cook for 1 minute.
    5. Add crawfish milk slowly to make a cream sauce.
    6. Cook until thickens.
    7. Add the mustard, cayenne, and simmer for 5 minutes.
    8. Add crawfish tails and green onions and simmer for 3 more minutes.
    9. Add salt to taste and serve over fresh pasta.
