Crawfish-Tasso Saute Recipe

Serves 1

Ingredients:

  • 2 tbsp oil
  • 2 tbsp onion, minced
  • 1 tbsp bell pepper, minced
  • 1 tbsp celery, minced
  • 1 large mushroom, sliced
  • 1/2 tsp salt
  • 1/4 tsp Tabasco
  • 2 ounce Tasso or other smoked sausage, chopped
  • 1 tsp garlic, chopped
  • 3 ounce crawfish tails
  • 2 tbsp shrimp stock
  • 1 tbsp white wine
  • 1 tbsp green onion, parsley
  • 1 tbsp parsley, chopped
  • 1 tbsp butter


Instructions:

1. Heat oil over high heat in saute pan.
2. Saute next 7 ingredients until clear, browning slightly.
3. Add next 4 ingredients, cook until liquid is almost reduced and crawfish are hot.
4. Add green onions, parsley and butter.
5. Heat until butter melts.
6. Serve over seasoned rice or buttered pasta.
