Crawfish-Tasso Saute Recipe
Serves 1 Ingredients: 2 tbsp oil
2 tbsp onion, minced
1 tbsp bell pepper, minced
1 tbsp celery, minced
1 large mushroom, sliced
1/2 tsp salt
1/4 tsp Tabasco
2 ounce Tasso or other smoked sausage, chopped
1 tsp garlic, chopped
3 ounce crawfish tails
2 tbsp shrimp stock
1 tbsp white wine
1 tbsp green onion, parsley
1 tbsp parsley, chopped
1 tbsp butter
Instructions: 1. Heat oil over high heat in saute pan.
2. Saute next 7 ingredients until clear, browning slightly.
3. Add next 4 ingredients, cook until liquid is almost reduced and crawfish are hot.
4. Add green onions, parsley and butter.
5. Heat until butter melts.
6. Serve over seasoned rice or buttered pasta.
