Christmas Crawfish Stuffing Recipe
Makes 6 cups Ingredients: 8 ounce pk cornbread stuffing mix
1/4 lb butter
1 cup celery, chopped
1/2 cup bell pepper, chopped
1/3 cup white onion, chopped
1 lb crawfish, chop coarse
1 tsp salt
2 tsp Prudhomme's Seafood Magic or creole seasoning
1/2 cup green onion, chopped
1 can water chestnuts, sliced
1 cup water
Instructions: 1. Melt butter and saute celery, bell pepper and onion until limp.
2. Add the crawfish tails, sprinkle with salt and Seafood Magic.
3. Saute for 5 minutes.
4. Add the stuffing, water chestnuts, green onion and water.
5. Mix well.
6. Spoon into a buttered dish or turkey cavity.
7. Bake uncovered at 350~ for 25 minutes.
