Christmas Crawfish Stuffing Recipe

Makes 6 cups

Ingredients:

  • 8 ounce pk cornbread stuffing mix
  • 1/4 lb butter
  • 1 cup celery, chopped
  • 1/2 cup bell pepper, chopped
  • 1/3 cup white onion, chopped
  • 1 lb crawfish, chop coarse
  • 1 tsp salt
  • 2 tsp Prudhomme's Seafood Magic or creole seasoning
  • 1/2 cup green onion, chopped
  • 1 can water chestnuts, sliced
  • 1 cup water


Instructions:

1. Melt butter and saute celery, bell pepper and onion until limp.
2. Add the crawfish tails, sprinkle with salt and Seafood Magic.
3. Saute for 5 minutes.
4. Add the stuffing, water chestnuts, green onion and water.
5. Mix well.
6. Spoon into a buttered dish or turkey cavity.
7. Bake uncovered at 350~ for 25 minutes.
