Crab Meat Alma Recipe
Serves 8 Ingredients: 1 each stick butter or margarine
1 each small bunch chopped green onion
1/2 cup parsley, finely chopped
1/2 cup celery, finely chopped
1 cup (small) mushrooms, drained
3 tbsp flour
2 cups light cream
2 cups swiss cheese, grated
1/2 cup sherry or vermouth, dry
1 pinch cayenne pepper
Salt, to taste
1 lb white crab meat (or shrimp)
Instructions: 1. Melt butter in heavy saucepot.
2. Saute vegetables until soft.
3. Blend in flour and add cream.
4. Heat until thickened.
5. Add cheese and heat until it has melted.
6. Add wine, cayenne pepper, and salt.
7. Fold in crab meat or shrimp.
8. Heat gently for 8 to 10 minutes.
9. Serve with french bread or in patty shells.
