Crab Cakes with Tomato Dill Sauce Recipe
Serves 4

Ingredients: 1 lb crab meat, cooked, cartilage removed and meat flaked
1 1/2 cups soft white bread crumbs
2 tbsp margarine
1 tsp dry mustard
1/2 tsp salt
1/8 tsp pepper
2 egg yolks, beaten
1 tbsp olive oil
Tomato Dill Sauce:
1/2 cup mayonnaise
1 tbsp tomato paste
1 1/2 tsp fresh dill weed, or 1/2 tsp dried
Tabasco Sauce:
1 small tomato, chopped
Instructions: 1. Mix all ingredients except Tomato Dill Sauce and oil.
2. Shape mixture into 8 patties, each about 2 1/2 inches in diameter.
3. Cover and refrigerate about 1 1/2 hours or until firm.
4. Prepare Tomato Dill Sauce; cover and refrigerate until serving.
5. Heat oil in 10 inch skillet over medium high heat.
6. Cook patties in oil about 5 minutes, turning once, until light brown on both sides.
7. Serve with sauce.
8. For Tomate Dill Sauce, mix all ingredients until blended.
