Aquitaine Crabmeat au Gratin Recipe

Serves 2


  • 1 stick of butter
  • 1 bunch of green onions (chop)
  • 1 can evaporated milk
  • 1/2 lb swiss cheese (five slices)
  • 4 tsp dry white wine
  • 1 lb crab meat


1. Saute green onions in butter til soft.
2. Add flour.
3. Blend together and begin adding cream radually until sauce is smooth.
4. Add cheese, wine and seasonings (salt, pepper, and cayenne pepper to taste).
5. Fold in crabmeat very gently.
