Vegetable Clam Chowder Recipe

Serves 4

Ingredients:

  • 2 tbsp margarine or butter
  • 1 16-oz pk frozen mixed vegetables (such as broccoli, corn and red peppers mix)
  • 2 6 1/2-oz cans minced clams, drained
  • 3 cups milk
  • 1 tsp salt
  • 1/8 tsp pepper


Instructions:

1. Place margarine and frozen vegetables in 3-quart microwavable casserole.
2. Cover tightly and microwave on high for 8 to 10 minutes or until hot.
3. Stir in remaining ingredients.
4. Cover tightly and microwave on medium-high (70%) for 10 to 12 minutes, stirring after 5 minutes, until hot.
