Rhode Island Clam Cakes Recipe
Serves 4
Ingredients:
4 cups flour
8 tsp baking powder
3 tsp salt
1 tsp pepper
4 each eggs
2 cups milk
1 pint clams, canned with liquid
2 cups lard, or more, for deep frying
Instructions:
1. Mix all of above (except lard).
2. Deep fry at 375 by dropping from oiled spoon.
3. Salt and pepper after cooking.
