Rhode Island Clam Cakes Recipe

Serves 4

Ingredients:

  • 4 cups flour
  • 8 tsp baking powder
  • 3 tsp salt
  • 1 tsp pepper
  • 4 each eggs
  • 2 cups milk
  • 1 pint clams, canned with liquid
  • 2 cups lard, or more, for deep frying


  • Instructions:

    1. Mix all of above (except lard).
    2. Deep fry at 375 by dropping from oiled spoon.
    3. Salt and pepper after cooking.
