Popovers and Pineapple Fritters Recipe

Makes 2 dozen

Ingredients:

  • 1 cup milk
  • 1 cup flour
  • 2 eggs
  • 2 tbsp melted butter, cooled
  • 1/2 tsp salt


Instructions:

1. For Popovers: Blend in blender or Cuisinart until just combined.
2. Do not overblend.
3. Half fill 8 buttered 1/2-cup metal molds and set on preheated baking sheet in 425 degrees.
4. Bake 30 minutes or until well puffed and crisp.
5. For Pineapple Fritters: Leftover pancake batter makes good Pineapple Fritters.
6. Dip slices in flour, then pancake batter and fry in small amount of hot fat.
7. Drain.
8. Good with ham, pork, etc.
