Pfitzauf Recipe

Makes 12 muffins

Ingredients:

  • 2 cups plus 3 1/2 tbsp flour
  • 2 cups milk
  • 4 eggs
  • Salt
  • 2 tbsp melted butter
  • 1 tbsp sugar


Instructions:

1. Combine the flour, milk, eggs, salt, and, if desired, a little sugar, and stir into a dough.
2. Then mix in the melted butter.
3. Grease a 'Pfitzauf' pan (an ordinary muffin pan will do) and fill halfway up with the dough.
4. Bake in a hot (400 F) oven for 25 minutes until light brown, WITHOUT ever opening the oven door to check!
5. The "Pfitzauf" gets dusted with sugar and is served with stewed fruit.
