Chicken Noodle Soup Recipe

Serves 8 to 10

Ingredients:

  • 4 lb chicken
  • 3 qt cold water
  • 1 onion, sliced
  • 1 carrot, sliced
  • 1 bay leaf
  • 1 tsp parsley
  • Salt and pepper


  • Instructions:

    1. Wash and clean chicken carefully; cut in pieces.
    2. Cover with the cold water.
    3. Add the vegetables and seasoning and let simmer for 3 hours or until chicken is tender.
    4. Skim off fat.
    5. Remove the chicken and add 2 cups of noodles and cook 15 minutes.
    6. Serve hot.
