Italian Nut Balls Recipe
Makes 48 cookies Ingredients: 3/4 cup sugar
1 tsp salt
3/4 cup margarine
2 egg yolks
1/2 tsp vanilla
1/2 tsp almond extract
2 cup flour
2 egg whites
1 cup finely chopped pistachios
1/2 cup jelly or preserves
Instructions: 1. In large bowl combine sugar, salt, margerine, egg yolks, vanilla and extract.
2. Beat on medium speed.
3. Add flour.
4. Mix well.
5. Roll dough into 1 inch balls.
6. Dip into egg whites then nuts.
7. Place on greased cookie sheets 2 inches apart.
8. Make a deep depression in center of each cookie with fingertip.
9. Bake 10-12 minutes until firm to the touch.
10. Fill with jelly while warm.
