East Texas Pecan Drops Recipe
Makes 48 cookies Ingredients: 1 cup pecans
1/2 cup butter or margarine
1/2 cup and 2 tbsp shortening, divided
1 cup confectioners' sugar
2 1/2 cups sifted cake flour
2 tsp vanilla extract
Instructions: 1. Chop pecans rather coarsely.
2. Work or cream butter (or margarine) and shortening together until smooth.
3. Beat in the confectioners' powdered sugar gradually.
4. Stir in the flour throughly and add vanilla and pecans.
5. Mix well.
6. Drop by teaspoonsfuls onto an ungreased baking sheet.
7. Bake in 325 F preheated oven for 15 to 20 minutes or until they are a delicate, light brown.
