Crunchy Peanut Butter Cookies Recipe
Makes 6 dozen cookies
Ingredients: 1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1/2 tsp salt
1/2 cup butter or margarine
1/2 cup crunchy peanut butter
1 egg
1/2 tsp vanilla extract
1 cup sifted all purpose flour
1/2 tsp baking soda
Instructions: 1. Cream sugars, salt, butter and peanut butter thoroughly in large mixing bowl.
2. Beat egg and extract into creamed mixture until light and fluffy.
3. Sift together flour and soda.
4. Blend into creamed ingredients gradually.
5. Form into 1" balls and place 2" apart on ungreased cookie sheets.
6. With floured fork, make a criss-cross design to flatten cookies.
7. Bake in hot oven 400 for 6-7 minutes or until light brown around edges.
8. Store in airtight container.
