Cream of Peanut Soup Recipe

Serves 8 to 10

Ingredients:

  • 1 medium onion, chopped
  • 2 ribs celery, chopped
  • 1/4 cup butter or margarine
  • 3 tbsp flour
  • 2 qt chicken broth
  • 2 cup smooth peanut butter
  • 1 cup half and half, heated


  • Instructions:

    1. Saute onion and celery in butter until tender but not brown.
    2. Stir in flour and blend well.
    3. Add chicken broth, stirring constantly.
    4. Bring to a boil; then simmer for 3 to 5 minutes.
    5. Remove from heat and rub through a sieve.
    6. Discard vegetables.
    7. Add last 2 ingredients, stirring to blend thoroughly.
    8. Heat through but do not boil.
    9. Garnish with chopped peanuts.
