Cream of Peanut Soup Recipe
Serves 8 to 10 Ingredients: 1 medium onion, chopped
2 ribs celery, chopped
1/4 cup butter or margarine
3 tbsp flour
2 qt chicken broth
2 cup smooth peanut butter
1 cup half and half, heated
Instructions: 1. Saute onion and celery in butter until tender but not brown.
2. Stir in flour and blend well.
3. Add chicken broth, stirring constantly.
4. Bring to a boil; then simmer for 3 to 5 minutes.
5. Remove from heat and rub through a sieve.
6. Discard vegetables.
7. Add last 2 ingredients, stirring to blend thoroughly.
8. Heat through but do not boil.
9. Garnish with chopped peanuts.
