Nut and Fruit Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 cup whole wheat flour
  • 1 cup rye flour
  • 1 cup soya flour
  • 1 cup wheat germ
  • 1 tsp soda
  • 1/2 tsp salt
  • 2 eggs
  • 1 1/2 cup brown sugar
  • 2 cup chopped dates or raisins
  • 1 cup vegetable oil
  • 2 cup chopped nuts
  • 3/4 cup sour milk or buttermilk


Instructions:

1. Preheat oven to 325F.
2. Add soda to milk and let foam.
3. Put ingredients in mixer and beat 3 minutes after each, in order now given.
4. Eggs, sugar, salt, oil, milk.
5. Add dry ingredients, fruit and nuts.
6. Mixture is very thick.
7. Bake in muffin papers 45 minutes.
8. Keep refrigerated afterwards.
