Coconut Humdingers Recipe
Makes 60 cookies Ingredients: 1 cup butter
1 1/2 cup sugar
1 lb dates, chopped
2 eggs
2 tbsp milk
1 cup nuts, chopped
1 tsp vanilla
4 cup rice krispies
1 pk flaked coconut, 14-oz pkg
Instructions: 1. Melt butter and sugar in a skillet, stirring for 2 minutes.
2. Add chopped dates.
3. Set aside.
4. In a small bowl, beat 2 eggs and milk.
5. Slowly add a small amount of hot mixture to eggs and milk.
6. Pour entire egg mixture into skillet.
7. Cook mixture 2 minutes, stirring constantly.
8. Add nuts, vanilla, and cereal.
9. Roll small amount, about 1 large heaping tablespoon, into a ball (be careful, it will be hot) and roll ball in coconut.
10. This freezes well.
