Coconut-Molasses Muffins Recipe

Makes 12 muffins

Ingredients:

  • 2 cup am whole wheat flour
  • 2 tsp non-alum baking powder
  • 1/2 tsp sea salt (optional)
  • 1/2 tsp ginger
  • 1 cup flaked unsweetened coconut
  • 1/4 cup am unrefined vegetable oil
  • 1 egg or egg replacer
  • 2/3 cup buttermilk
  • 1/2 cup unsulphured molasses honey
  • 1 tsp pure vanilla


  • Instructions:

    1. In mixing bowl stir together flour, baking powder, salt, ginger and coconut.
    2. Mix liquid ingredients and add to the dry mixture until moistened.
    3. Fill well-greased muffin tins 2/3 full.
    4. Bake at 350 F for 20-25 minutes.
