Coconut-Molasses Muffins Recipe
Makes 12 muffins Ingredients: 2 cup am whole wheat flour
2 tsp non-alum baking powder
1/2 tsp sea salt (optional)
1/2 tsp ginger
1 cup flaked unsweetened coconut
1/4 cup am unrefined vegetable oil
1 egg or egg replacer
2/3 cup buttermilk
1/2 cup unsulphured molasses honey
1 tsp pure vanilla
Instructions: 1. In mixing bowl stir together flour, baking powder, salt, ginger and coconut.
2. Mix liquid ingredients and add to the dry mixture until moistened.
3. Fill well-greased muffin tins 2/3 full.
4. Bake at 350 F for 20-25 minutes.
