Blender Coconut Pie Recipe

Serves 6 to 8

Ingredients:

  • 1 13-oz can evaporated milk
  • 3 eggs
  • 1 cup sugar
  • 1 cup coconut, flaked
  • 3 tbsp vegetables oil
  • 3 tbsp all-purpose flour
  • 1/2 tsp vanilla extract
  • Ground nutmeg


  • Instructions:

    1. Combine all ingredients except nutmeg in container of electric blender.
    2. Process mixture until well blended.
    3. Pour into a greased and floured 10-inch pie plate (mixture will be thin).
    4. Sprinkle top of mixture with nutmeg; bake at 325 F for 40 minutes or until pie is set.
    5. Let pie stand for 10 minutes before serving.
