Blender Coconut Pie Recipe
Serves 6 to 8 Ingredients: 1 13-oz can evaporated milk
3 eggs
1 cup sugar
1 cup coconut, flaked
3 tbsp vegetables oil
3 tbsp all-purpose flour
1/2 tsp vanilla extract
Ground nutmeg
Instructions: 1. Combine all ingredients except nutmeg in container of electric blender.
2. Process mixture until well blended.
3. Pour into a greased and floured 10-inch pie plate (mixture will be thin).
4. Sprinkle top of mixture with nutmeg; bake at 325 F for 40 minutes or until pie is set.
5. Let pie stand for 10 minutes before serving.
