Altdeutxche Brotchen (Old German Muffins) Recipe

Makes 18 muffins

Ingredients:

  • 3/4 cup butter or margarine
  • 1/2 tsp cinnamon
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 2 eggs, large
  • 2 1/4 cup flour, unbleached
  • 1 tbsp rum
  • 1/4 cup almonds, ground
  • 1 tsp vanilla extract
  • 1 tbsp orange rind, grated
  • 3 tbsp milk
  • 1/4 cup raisins (optional)


Instructions:

1. Cream butter and sugar.
2. Beat in eggs, rum, vanilla, and milk.
3. Mix cinnamon, baking powder, and flour.
4. Add flour mixture to butter mixture.
5. Gently mix in almonds, orange rind, and raisins.
6. Pour batter into greased muffin tins, filling half full.
7. Bake at 375 F for 25 to 30 minutes, or until browned.
