Almond Cookies Recipe

Makes 2 dozen

Ingredients:

  • 1 cup shortening
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tsp almond extract
  • 2 1/4 cup all-purpose flour
  • 1/8 tsp salt
  • 1 1/2 tsp baking powder
  • Blanched almonds
  • 1 egg yolk and 2 tbsp water


Instructions:

1. Cream shortening and sugars til fluffy.
2. Add egg and extract and beat well.
3. Mix in flour, salt, and baking powder.
4. Roll 1 tablespoon of dough into a ball.
5. Place 2 inches apart on cookie sheet.
6. Flatten to 2 inches round and place almond in center.
7. Brush with beaten egg yolk and water mixture.
8. Bake at 350 until lightly brown, about 10 minutes.
9. Cool.
10. Store in airtight container.
