Mushroom Muffins Recipe

Makes 12 muffins

Ingredients:

  • 3/4 cup mushrooms, chopped
  • 1 3/4 cups flour
  • 1/3 cup onions, chopped small
  • 1 tbsp sugar
  • 1/4 cup walnuts, chopped small
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 2 tsp baking powder
  • 1/2 tsp ground thyme
  • 1/2 cup Cheddar cheese, grated
  • 1/2 tsp dried parsley
  • 3/4 cup milk
  • 1/2 tsp salt, or less if desired
  • 1/3 cup cooking oil
  • 1 tbsp butter
  • 1 egg, beaten


Instructions:

1. Melt butter in small skillet and add mushrooms and onions. Saute until onion is translucent.
2. Heat oven to 400F.
3. Add the mushroom mixture to the dry ingredients and stir just until the dry ingredients are moistened.
4. Add wet ingredients. Mix well.
5. Pour batter into pre-greased muffin tins.
6. Bake at 400F 15-20 min or until toothpick inserted in muffin comes out clean.
7. Serve warm.
