Many Mushrooms Soup Recipe

Serves 4

Ingredients:

  • 3 tbsp butter
  • 3 cups chicken broth
  • 3 tbsp oil
  • 1/4 cup white port
  • 1 clove garlic, minced
  • 2 tbsp tomato paste
  • 1 onion, chopped
  • 1/2 cup parsley, minced
  • 1 lb mixed mushrooms (oyster, morels, porcini, enoki)
  • Pepper, to taste


Instructions:

1. Melt butter and oil in large saucepan.
2. Saute garlic and onion slowly over low heat, 10 minutes.
3. Add sliced mushrooms, cover and cook over medium heat for 5 minutes.
4. Add broth, port and tomato paste.
5. Simmer 10 minutes.
6. Add parsley and freshly ground pepper.
7. Serve.
