Turkey Cutlets Milanaise Recipe

Serves 4

Ingredients:

  • 2 (1 oz) slices French bread
  • 8 (2 oz) turkey breast or other firm white bread cutlets, cubed
  • 2 tbsp flour
  • 1/4 cup grated Parmesan
  • 1 tbsp chopped fresh parsley
  • 1 egg, beaten
  • Lemon wedges
  • 1 egg white


  • Instructions:

    1. With knife blade in processor, add bread cubes.
    2. Process about 30 seconds or until crumbs are fine.
    4. Spread crumbs on an ungreased baking sheet.
    5. Bake at 350 F for 7 minutes or until crumbs are lightly browned.
    6. Combine 1 cup bread crumbs and parmesan cheese in a shallow bowl; reserving remaining crumbs for another use.
    7. Set aside.
    8. Combine egg and egg white in a shallow bowl.
    9. Set aside.
    10. Pound each turkey cutlet to 1/4-inch thickness.
    12. Sift flour over both sides of cutlets.
    13. Dip cutlets in egg mixture; dredge in breadcrumb mixture.
    14. Place cutlets on a baking sheet coated with cooking spray.
    15. Bake at 450 F for 8 minutes. Sprinkle with chopped parsley and serve with lemon slices.
