Fiesta Turkey with Cream Sauce Recipe
Serves 6
Per Serving: 369 Calories; 2g Fat (6% calories from fat); 21g Protein; 66g Carb ohydrate; 34mg Cholesterol; 284mg Sodium.
Ingredients: 10 1/2 ozs HC cream of roasted garlic soup, condensed
1/2 cup fat-free sour cream
2 tsps lemon juice, bottled
1/2 tsp cumin
1/2 tsp olive oil
2 cup turkey light meat, skinless, cooked and cubed
2 cup frozen mixed vegetables, thawed
1/2 cup onions, chopped
1/2 cup fat-free Cheddar cheese, shredded
2 cup long-grain white rice, cooked
Instructions: 1. In a small bowl, combine soup, sour cream, lemon juice, and cumin; set aside.
2. I n a skillet, heat oil over medium heat.
3. Add turkey, vegetables, and onions.
4. Coo k until turkey is non longer pink and vegetables are tender.
5. Stir in soup mixtu re.
6. Simmer over low heat for 5 minutes.
7. To serve, sprinkle with cheese and serve over rice.
